Red Sea Bream - Raw fish with lightly cooked skin
This is red sea bream from Shikoku, the cut of fish coming from the back. This is the first piece of sushi I had while it was early in the evening and there was nobody else in the sushi place. The sushi chef had the time to carefully explain the process of how to lightly cook the skin so that the skin was cooked enough to eat, but the fish was still raw so it could be eaten as sushi:
First put the red sea bream on a board and then put a sarashi on top. A sarashi is a fine bleached cotton cloth, but a paper towel will work too. Run a little boiling water over the sarashi for a few seconds. Then immediately put the red sea bream in ice water for about a minute. Next take the red sea bream out and pat it dry.
The skin will be soft and easy to eat.
This fish is not red snapper, but may be referred to as such in sushi places in America. Americans are familiar with red snapper but not with red sea bream.
