Cod Sperm - Winter sushi from Hokkaido



The sushi chef told me that this cod sperm was from Hokkaido and is available only in winter. He said both the hard roe from the female cod and the soft roe from the male cod were eaten. He seemed to rather like the idea. I’m not sure why. The sushi chef also talked about the price of cod sperm with one of the other sushi chefs. They concluded that the price was between 5,000 and 8,000 yen per kilogram, certainly not economy sushi, which prohibits many sushi places from offering this cod sushi.
