Marinated Mackerel - Marinated in Rice Vinegar



This marinated mackerel was marinated in rice vinegar for about an hour. The sushi chef explained to me that although there are thousands and thousands of fish that can be eaten as sushi, only a limited variety end up in the fish market. So sushi chefs marinate and do other things to increase the variety.
