Raw Salmon - Is the raw necessary?

This salmon sushi was listed on the menu as raw salmon. Wondering why fish on a sushi menu needed to be described as raw, I asked the sushi chef. He pointed to grilled salmon on the menu. In America, these might be listed as salmon and grilled salmon. There is also smoked salmon served in some sushi rolls in America, commonly known as the Philadelphia roll due to the Philadelphia cream cheese used to make them. I doubt we can find the Philadelphia roll in Japan but one never knows.

Returning to this piece of sushi salmon, you can see a bit of black on the sushi. This is a bit of skin left on the fish, not dirt.
