Ume Maki - Ume maki with shiso



This is ume maki with shiso. That sounds very Japanese, and it should. People all over the world use steak, hamburger, and pizza. People who eat sushi use the Japanese. If you need to explain what this means to anybody, you can say that it is a sushi roll with plum and perilla inside. Most people will not know what perilla is and you can then explain that it is in the mint family. Explaining ume is a little bit more difficult. Examining the Internet, you can find many options including pickled Japanese plum, plum paste, salty plum, sour pickled plum, sour plum puree, and pickled plum. That will probably leave your listener puzzled. You can then try something like the following:

Pickled plums, which are called ume, are a Japanese specialty. The plums are flavored with salt and shiso, making them both salty and sour.

Returning to Japanese versus English in explaining about sushi, there are also some things that translate well and others that don't. For example, cucumber roll sounds fine while pickled daikon roll does not. You can tell, from looking at our pages, that we have not yet resolved when to use English names and when to use Japanese names. We go back and forth as many sushi eaters do.
