Shinko Maki - Shinko maki with shiso
Looking on the Internet, you can find a wide range of options for what to call shinko maki. We found shinko maki (daikon), pickled radish roll, pickled radish, pickled-daikon (radish) roll, radish roll, and even takuan roll. While Takuan, the priest who invented shinko maki long ago, may appreciate that, the sushi chef assured me that takuan maki was not acceptable Japanese. We would suggest using shinko maki with shiso and explaining if that is not understood. Shiso can be explained as perilla, which is in the mint family. Takuan can be explained as bright yellow crispy pickled daikon as we found it used on the Internet. We like the word crispy in there!
