This adult yellowtail was divine. Divine is another word for delicious. The adult yellowtail has so much more fat than the young yellowtail. Interesting how fat is a virtue in sushi when we often use fat as a negative word for food in California. Fatty meat is low quality, but fatty sushi is not. The sushi chef told me that this was a good time to have adult yellowtail as it was only available through February. The young and adult yellowtail appear to both be adults, making the English translations of hamachi and buri into young yellowtail and adult yellowtail instead of something perhaps involving child and adult.
