Fresh water eel without a fancy name

In English, we refer to both kinds of eel with one word. Unagi, however, is freshwater eel, not saltwater eel. This unagi sushi has rice, seaweed, salmon, bits of lime rind, and fish eggs, which are probably salmon roe. The green is probably cucumber. This is quite a work of art, but the unagi doesn't have a fancy name. Sushi rolls in California are very popular and sushi chefs create an amazing array of culinary delights. Some of these sushi rolls have even been spotted at sushi places in Japan.
