Geoduck Clam - Not geo but gooey

This is the first geoduck clam I have ever eaten. I ordered the sushi, the sushi chef opened this one in front of me, popped it out of the shell, put it in boiling water for a few seconds, chilled it in cold water, and made my sushi! The part of the clam that we eat is called the spout.

Although this geoduck clam was on the menu as geoduck clam, I have since learned that what is called true geoduck clam, or real geoduck clam, in Japan is actually black. So, if are a true sushi aficionado, and see geoduck clam on the menu, you will probably ask if it is the real thing. This may not be...

It was still quite an experience though.

Sushi chef: It is something, isn't it!

Comment: While the geo in geoduck looks like it should be pronounced like the geo in geography or geology, it is not. It is actually pronounced gooey.
