Hirame is yet another fish with a bewildering variety of names in English. Is Hirame halibut, flounder, sole, turbot, flatfish, or plaice? The sushi chef where we ate this said this was halibut, so we put halibut first. Checking at Wikipedia, I saw that flounder is listed.

Regardless of the naming, this hirame was delicious.
