Tuna - Swimming as fast as 77 km an hour



Tuna can swim fast, and have been clocked moving as fast as 77 km an hour. That interesting piece of trivia aside, maguro is very popular, both in Japan and the United States. Checking with Wikipedia, maguro is the top loin of bluefin tuna. This could be northern bluefin tuna, southern bluefin tuna, or Pacific bluefin tuna. Our sushi chef said this was red tuna though. We finally realized that red tuna is simply an abbreviation from red bluefin tuna meat.

The lion's share of tuna sold in America is canned tuna, which is then made into sandwiches, tuna casseroles, and other tuna dishes. Canned tuna consumption is no longer growing in America due to concerns about mercury. American consumption of canned tuna is now either declining slightly or flat.

Maguro consumption, however is on the rise as Americans eat more and more sushi and sashimi. Tuna is very healthy, but mercury is not. Tuna tested for mercury, such as the secret tests publicized by http://gotmercury.org/, have repeatedly shown that a substantial percentage of the tuna eaten in America has too much mercury to be fit for human consumption. This is probably true in Japan too.
